ABC’s Bunny’s Garden is a haven in East Harlem, where children and their families can grow and access fresh, healthy food while building sustainability and good nutritional practices. You can see the different types of vegetables we grow every year in the virtual tour below.
Throughout the COVID-19 pandemic, ABC’s Garden Coordinator Ebony Boone has been hosting virtual cooking classes to continue promoting healthy eating in the communities we serve. During these classes, friends of Bunny’s Garden share their favorite recipes that use at least one ingredient from the garden.
We at ABC were having so much fun learning how to cook new dishes, so we are bringing you one of our favorites!
Tannis Cooks Callaloo and Saltfish
In this video, Tannis shows us how to make callaloo and saltfish - a simple but delicious Jamaican dish that can be had either as a side or main dish. While Tannis used saltfish here, you can also make this dish vegetarian and still get the yummy, spicy flavors!
Ingredients: callaloo, garlic, onion, saltfish, vegetable oil, and hot pepper (optional)
Chop three slices of onion and one to two cloves of garlic. If you enjoy spice, chop a couple slices of hot pepper as well.
Chop callaloo into the size you want.
Heat your pan and put a little bit of vegetable oil. Start sauteing your onion, garlic, and hot pepper. Add in calalloo and season as desired with salt.
Add the saltfish.
